Food is the rich expression of the rural and rustic life of Fiuggi and Ciociaria, antique flavours bound to the land, genuine produce.
Well known are the cheese and sheep’s ricotta but also homemade pasta: gnocchetti and “fini fini” (very fine homemade spaghetti).
A MUST is also the classic ciociaro meat sauce with chicken entrails and tomato or polish mushrooms, and many other delicacies.
From the Antina Cannellini beans to the grilled Pontecorvo peppers; from jam (black cherry, currant, grape, plum) to apples and sweets (syrupy cakes, red and white wine cakes, the “ugly but nice” and the typical amaretto biscuits of Fiuggi) for a true roundup of flavours.
Last but not least are the cold meats and wines (Cesanese del Piglio, Passerina del Frusinate, Torre Ercolana, Merlot di S.Elia Fiumerapido, Cabernet di Atina) that make Fiuggi and Ciociaria worthy of being “tasted”. |
